When you're speaking with a friend (or family member ect.) you can say ''ça va, et toi ?" or ''Je vais bien, (merci), et toi ?" But you don't say really ''thank you -> merci" when you say ''And you -> Et toi" Sorry for mistakes, but my level of english is bad

'私が日本語を習うことを手伝ってください。' is direct translation. But it is not so natural Japanese.
Variation is below:
'日本語を習う事を手伝ってください。' Japanese often ommit subject in sentence, if it is obvious. In this case the person who learn Japanese is obvious, so '私' can be omitted in the sentence.
'日本語を学ぶ事を手伝ってください。' '習う' has a image that someone teach you. '学ぶ' has a image that you proactively learn or practice.
'日本語を学ぶ事を手伝ってくれませんか?' 'くれませんか' can be translated 'Could you (do something)'. This expression gives the feeling 'politeness'.

I did not fully understand everything you wrote, but "bien, merci" is the answer right? And "bien merci, et vous?" would be "fine thank you, and you?"

On dit :" bien, merci " (sous entendu : "je vais bien, merci") Si la conversation commence par "bonjour, comment allez vous ? " l'autre personne répond : " bien merci " puis elle demande " et vous ?" ....
